DESCRIPTION
This red wine is carefully crafted to reveal the full richness and depth of the Marselan grape. The winemaking process begins with a cold pre-fermentation fermentation, followed by a 15-day warm maceration, allowing for the extraction of color, structure, and power.
Finally, the wine is aged in concrete tanks, where it gains balance, roundness, and authenticity.
TASTING:
The wine has an intense ruby red color. The nose opens with a rich aromatic palette: ripe black fruits, olives, and forest floor. On the palate, it impresses with its robust and tannic structure. The flavors of ripe black fruits mingle with menthol notes, which lend freshness and create a harmonious and flavorful experience. A red wine of character, powerful and authentic, reflecting the terroir of the Cévennes.
FOOD & WINE PAIRINGS:
The wine’s tannic power and structure call for rich dishes to complement it. The olive and mint aromas of Garrigues find a natural echo with dishes enhanced with aromatic herbs, grilled dishes and simmered dishes.
