DESCRIPTION
The grapes that make up this cuvée come from a very rigorous selection in the vineyard, both in terms of yields and maturity. Because the future of the wine hinges on the maturity of the berries. The vinification is deliberately traditional, with partially destemmed grapes for a 3-week maceration.
TASTING :
The color is garnet, and on the nose, there are aromas of ripe fruits (blackberry, blackcurrant) paired with spicy notes (white pepper). The mouthfeel is where the maturity of the grapes shines: the tannins, although very present, are smooth and don’t overpower. Their subtlety doesn’t detract from this cuvée’s aging potential and ensures a harmonious evolution.
WINE AND FOOD PAIRING :
The power and softness of this wine pair wonderfully with pan-fried beef topped with tapenade, or slightly spicier dishes like beans with bacon and red pepper.
