DESCRIPTION
This sulfite-free red wine is made from a selection of grapes harvested at peak ripeness. The winemaking process begins with a cold pre-fermentation fermentation, which gently extracts aromas and color, before a three-week warm maceration, which adds structure and intensity. Aging in concrete tanks then refines the wine, giving it balance and authenticity.
TASTING:
The wine displays an intense, deep, and brilliant garnet color. The nose opens with a generous expression of ripe black fruit, accompanied by notes of garrigue and undergrowth that fully evoke the character of the Cévennes terroir. On the palate, the wine has a smooth and enveloping texture. Ripe black fruit flavors dominate, supported by still-present tannins that structure the whole without imbalance. The alcohol is perfectly integrated, bringing roundness and harmony.
FOOD AND WINE PAIRINGS:
The tannins and body of Marselan pair perfectly with rich meats and cheese, while its notes of garrigue and undergrowth complement dishes featuring aromatic herbs, mushrooms, and grilled or simmered preparations.
