DESCRIPTION
Our Sauvignon Blanc is vinified pure. After natural clarification by pea protein flotation, fermentation takes place slowly at a low temperature (14-16°C) to preserve its lively and fruity notes. The wine is then racked and aged for a few months in concrete tanks, where it gains balance and expression before bottling.
TASTING:
Its lemon-yellow color is luminous. On the nose, it’s an explosion of exotic aromas: the vibrancy of passion fruit and lime mingles with a floral touch, reminiscent of jasmine and orange blossom, bringing finesse and elegance. On the palate, the lively attack rounds out, enveloping the palate with ripe apricot flavors. The vibrant finish leaves behind fruity freshness and the typical thiolic signature of Sauvignon Blanc. A sunny and vibrant wine, perfect for enhancing your aperitifs and summer meals.
FOOD AND WINE PAIRING:
The exuberance and persistence of the aromas (exotic fruits and thiol notes) leave no one indifferent. Moreover, it can accompany an entire meal from salad to cheese given its aromatic range and persistence. Perfect as an aperitif, ideal with seafood or fatty fish, it will enhance the goat cheeses from our region.
