DESCRIPTION
Our Chardonnay is vinified pure. After clarification by pea protein flotation, fermentation takes place slowly at a controlled temperature (14-16°C) to preserve all its freshness and aromatic finesse. The wine is then racked and aged for a few months in concrete tanks, where it develops its balance and roundness before bottling.
TASTING NOTES:
Beneath its brilliant lemon-yellow robe with golden highlights, this Chardonnay charms with a subtle and refined nose that gently reveals the lusciousness of ripe stone fruits and the delicate nuances of milk and toast. On the palate, the silky roundness caresses the palate, allowing the elegant freshness of juicy white peaches to blossom, enhanced by a hint of acacia blossom. The long and harmonious finish prolongs the pleasure on a smooth note. A sunny and refined Chardonnay that delicately expresses the generosity of the Cévennes.
PAIRING SUGGESTIONS:
This wine pairs well with fish (such as grilled red mullet fillets), crustaceans, and white meats (like veal blanquette). We also recommend enjoying it with Picodon cheese.
