DESCRIPTION
Each grape variety in this rosé is vinified separately, then blended after tasting to achieve the desired balance. Clarification is carried out by flotation with pea proteins, before a slow fermentation at a controlled temperature (14-16°C), which preserves all the freshness and aromatic intensity. The wine is then racked and aged in concrete tanks, where it matures before bottling.
TASTING :
Its color is delicate, a light salmon pink. The nose opens with a vibrant bouquet of fresh red fruits: juicy strawberry, crisp raspberry, and tangy redcurrant. On the palate, the lively freshness is combined with a beautiful aromatic intensity. The light finish leaves an impression of purity and freshness, like a summer breeze on the Cévennes hills. A rosé that is both refined and convivial.
FOOD AND WINE PAIRING :
Its structure predisposes it to accompany spring meals such as veal sauté with small vegetables or grilled mackerel fillets.
